Quick and Easy Eggs In A Cup

Whether you are in a rush or have limited cooking resources...you don't need a stove top to enjoy a nice soft scrambled egg or omelette. All you need is a microwave!  While staying in the guest suite of a relative's home recently, I prepared several eggs in a cup with various additions.  I shot a couple of photos with my phone after preparing one while there, as I did not bring my camera with me.

These eggs in a cup are fluffy and delicious, with or without cheese, or any other additional ingredients.  The one in the photos below is made with mozzarella cheese; however, you can use whatever cheese you prefer or have on hand. This method is so simple and delicious, that it is actually my favorite way to prepare them at home.

Eggs in a cup have been popular for some time now; but, if you haven't tried them yet, you'll be delightfully surprised how easy and good they are!  It might take a time or two to adjust the cooking time to your microwave; however, you'll find the method incredibly quick and easy!

                                     With Lots of Gooey, Melted Cheese!


Ingredients (per serving*)
  • 1 egg
  • Approx. 1 1/2 TB water*
  • S&P to taste
  • Approx. 2 or 3 TB shredded (or torn slice of) cheese of your choice...to taste (optional)
  • Non-stick butter-flavored cooking spray (optional)

Directions
  1. Spray a microwavable cup inside with the non-stick cooking spray (optional, depending upon the cup you use...but, the egg will release a little better).  Wash and crack the egg into the cup.  Add the water and sprinkle with S&P to taste, then whip well with a dinner fork.  (If I'm adding cheese, I omit the salt.)
  2. Cook approximately 50 seconds on 50% power.*  Remove from the microwave and sprinkle with the shredded or torn cheese.  Return to the microwave and cook approximately 50 seconds more on 50% power.  Take out of the microwave, run a spoon or small rubber spatula around the egg inside the cup and tilt the cup to slide the egg onto your serving plate.

*Tips
  • How long to cook the egg depends upon your microwave.  The directions I've given are based upon a 1200 watt microwave like the one we have at home.   I did 60 second intervals on 60% power at my relatives' home, and we could not find the wattage.  You may want to play around with your first attempt; but, I suggest starting with the 50 seconds at 50% power as per my directions above.
  • I learned years ago from a chef that scrambled eggs or omelettes are actually more fluffy with a little water as opposed to cream or milk.  Of course, use your preference...I don't know if adding cream or milk might require a little less cooking time.
  • Add additional ingredients other than cheese, if you prefer...like chopped tomatoes, cooked and crumbled breakfast meat, mushrooms, chopped sweet peppers, onions, etc.
