As these chocolate bliss bites are super easy to make with minimal ingredients, you and the kids can have a fun little project together and enjoy something sweet without guilt!

You'd Never Guess They're Healthy!
Makes about 23-24/ea. 1"Bites
Ingredients
- 1 c. Toasted nuts...walnuts, pecans or almonds (I used toasted almonds*)
- 1 c. Pitted dates
- 1/3 c. Unsweetened cocoa powder
- 1/2 c. Shredded unsweetened coconut flakes, plus more if needed (divided)
- Pinch of salt
- approx. 3 TB Warm water, if needed
Bite-sized paper cups
Directions
- Puree the nuts in a food processor with the sabatier blade attachment until finely ground.
- Add the dates, cocoa powder, 1/4 c. of the coconut and salt; then process until fully mixed (about 1-2 minutes).
- If needed, add the water a little at a time to make the candy workable. Wet your hands and form the mixture into about 1" balls.
- Roll the bites in the remaining 1/4 c. coconut, adding a little more if needed.* Serve in bite-sized paper cups and store any extra in a covered plastic container.
- Nancy recommended placing in the fridge for an hour to firm up before serving. However, I did not find that necessary, and I found the bites are best stored and served at room temperature. The delectables didn't last long here, but I imagine they would be good at least two weeks at room temperature in a covered plastic container.
- My new favorite way to toast nuts is on the lower rack of the toaster oven on the broiler pan lined with foil at 400º for about a minute...watch closely, as this process will go by very fast!
