Chocolate Bliss Bites ~ Easy, Healthy and Scrumptious!

Who ever knew such healthy little bites as these could be so addictive!  Everyone in the family loved them, and I plan on keeping them around to satisfy that chocolate craving whenever it hits (which is often)!

As these chocolate bliss bites are super easy to make with minimal ingredients, you and the kids can have a fun little project together and enjoy something sweet without guilt!

                                                 So Addictive...
                                    You'd Never Guess They're Healthy!

As adapted from Chef Nancy Waldeck's Chocolate Bites at Taste and Savor

Makes about 23-24/ea. 1"Bites

Ingredients
  • 1 c. Toasted nuts...walnuts, pecans or almonds (I used toasted almonds*)
  • 1 c. Pitted dates
  • 1/3 c. Unsweetened cocoa powder
  • 1/2 c. Shredded unsweetened coconut flakes, plus more if needed (divided)
  • Pinch of salt
  • approx. 3 TB Warm water, if needed
Supplies
Bite-sized paper cups

Directions
  1. Puree the nuts in a food processor with the sabatier blade attachment until finely ground.
  2. Add the dates, cocoa powder, 1/4 c. of the coconut and salt; then process until fully mixed (about 1-2 minutes).
  3. If needed, add the water a little at a time to make the candy workable.  Wet your hands and form the mixture into about 1" balls.
  4. Roll the bites in the remaining 1/4 c. coconut, adding a little more if needed.* Serve in bite-sized paper cups and store any extra in a covered plastic container.
*Tips
  1. Nancy recommended placing in the fridge for an hour to firm up before serving.  However, I did not find that necessary, and I found the bites are best stored and served at room temperature.  The delectables didn't last long here, but I imagine they would be good at least two weeks at room temperature in a covered plastic container.
  2. My new favorite way to toast nuts is on the lower rack of the toaster oven on the broiler pan lined with foil at 400º for about a minute...watch closely, as this process will go by very fast!
Great to keep on hand for snacks or serve as a party dessert, adults and children alike will find these scrumptious chocolate bites pure blissEnjoy!
